Easiest chocolate chip cookies | RECIPE

Hiya! Today I bring another recipe, sweet of course. I just find baking very calming, specially if it has such an easy recipe like this one.

For someone who loves baking and has such a sweet tooth I have always struggled to bake cookies. 
I remember once, I was so excited and 100% sure they would be perfect and what came out of the oven was a cookie the size of the baking tray.
The dough wasn't the right consistency and they melted as soon as they started to bake.
They were tasty, but the texture wasn't very nice, they weren't very soft and obviously the size... so I started to try and mix different recipes, adjusting them to make what it is now MY perfect cookie.

I tried to keep the recipe as simple and straight forward as I could because if at any moment, that moment is now people!, I ended up sharing it, I wanted people to get excited about them. Even the people who have never ever baked or people who have trouble baking cookies, like me.

So here is the recipe:

INGREDIENTS
- 115g butter
- 150g sugar (you can do half brown and half caster)
- 210g all purpose flour
- 1 egg
- 1/2 tsb salt
- 1/2 tsb basking soda
- 1 tbs vanilla extract
- 170g chocolate chips / chopped chocolate

METHOD
- Preheat your oven at 180ºC and prepare a baking tray with some parchment paper.
- Start by melting the butter. You can do this in the microwave, 20 seconds at a time so it doesn't explode.
- In a different bowl, mix the sugar and melted butter until everything is well combined.
- Add the vanilla and egg and stir.
- Add the salt, baking soda and flour (make sure to fluff and scoop the flour for proper measuring).
- Mix everything together until the dough is just combined. It should be sticky, shiny and soft.
- Finally stir in the chocolate chips or chopped chocolate.
- Scoop out heaped tablespoons of dough. Using your hands, very lightly form them into a ball and place on the baking tray.
- Put the baking tray in the fridge for about 10 mins.
- Bake at 180ºC for around 8 to 10 minutes.

TIPS
- If you have an ice cream scoop, use it! it will make shaping your cookies a lot quicker.
- If you have an uneven oven like me, make sure to turn the tray around half way though baking.
- When you take the cookies out of the oven, test one by pressing it very lightly. If it sinks but feels fluffy that it perfect! Otherwise you will end up with over baked cookies.

Like any cookie dough, if you don't want to bake it all at the same day you can always freeze. I'd recommend putting the formed cookie dough balls in the fridge for a few hours first and them pop them in an air tight container in the freezer. You can store them there for up to a month for you want freshly bakes cookies but I don't think they would last that long.

Also, the recipe here calls for chocolate chips, any chocolate you like would work but try using peanut butter chips too! They are delicious. Or even nuts. Or a mix or everything as long as it is 170g.
